Summary
Aioli is a garlicky French mayonnaise that's delicious on grilled vegetables. It can be made in the blender or a food processor, but I prefer to make it by hand with a whisk. Just be sure to take your time, adding the olive oil a few drops at a time. To avoid an overpowering olive flavor, don't use extra-virgin olive oil.
If you can't find pasteurized eggs or if time is tight, you can substitute 1 cup mayonnaise for the eggs and olive oil, and then add the garlic, mustard and lemon juice.
