Summary


Aioli is a garlicky French mayonnaise that's delicious on grilled vegetables. It can be made in the blender or a food processor, but I prefer to make it by hand with a whisk. Just be sure to take your time, adding the olive oil a few drops at a time. To avoid an overpowering olive flavor, don't use extra-virgin olive oil.

If you can't find pasteurized eggs or if time is tight, you can substitute 1 cup mayonnaise for the eggs and olive oil, and then add the garlic, mustard and lemon juice. If using prepared mayonnaise, omit the salt and pepper, as well. And of course, exercise due caution when serving any food containing mayonnaise on a hot day.
