A hazard to tooth and tight schedules, cooking with pistachios used to involve the time-consuming challenge of getting those apple- green nuggets out of their stubborn shells.A recipe that called for a cup of shelled pistachios might add an extra 20 minutes' preparation time.And although slightly split shells can be pried open by inserting and twisting a half-shell from a previously opened pistachio, more often than not, teeth were the not-so-wise tools of choice.
