Puerto Rico has it all, I thought on my visit there. Mountains, beaches, tropical forests, fascinating cities with 400-year-old Spanish forts. And then there's the food.

Nuevo Latino cuisine, with its fusion of flavors, has a hold in restaurants, but traditional dishes form the backbone. And that's primarily what I found at Quimera, a 156-seat restaurant that Olga and Jorge Ramirez opened in December on National Ave. in Walker's Point.

Quimera's atmosphere captures the spirit of Puerto Rico, too.

Salsa music plays in the background as you enter the main dining room, its floor covered in large tiles that look like stone. To your left you'll see a room with a fireplace, sometimes reserved for parties.
