California is about to overtake Wisconsin in making cheese. Or so reports the venerable and generally reliable New York Times.
We don't doubt the basic facts of the Sept. 30 article. Wisconsin produced 2.4 billion pounds of cheese last year. California produced 2.14 billion. It's not unreasonable to conclude that, given California's cheese-making pace tripling the amount made over the past 15 years that the state will soon pull ahead of Wisconsin.See the full content of this document
